Join Chef Dave for a fun, hands-on culinary experience designed to celebrate the lively flavors and traditions of Mardi Gras. Fat Tuesday is marked by feasts, indulgence, and festive dishes. This cooking class will focus on teaching participants how to make the classic Mardi Gras-inspired recipes.

Class description:

In this vibrant cooking class, you’ll dive into the rich, flavorful world of Mardi Gras cuisine! Get ready to create some of New Orleans’ most iconic dishes and celebrate Fat Tuesday like a true local. From Sausage and Chicken Gumbo, Shrimp Etouffee, Dirty Rice, and Beignets you will learn how to prepare these delicious dishes step by step including how to make a Roux for the sausage gumbo, roll out Beignets and how to make the holy trinity and incorporate it into a sauce.

Perfect for food enthusiasts or anyone looking to spice up their culinary skills, this class provides a festive atmosphere where you can enjoy learning, cooking, and of course, sampling your creations! Whether you’re new to New Orleans cooking or a seasoned chef, there’s something for everyone.

Menu:

  • Sausage and chicken gumbo (a rich, flavorful stew)
  • Shrimp Etouffee (a rich, buttery seafood stew)
  • Dirty rice (a traditional Louisiana Creole dish)
  • Beignets (fluffy fried dough dusted with powdered sugar)

At the end of the class, you’ll not only walk away with new recipes but also a taste of the spirited, joyous atmosphere that Fat Tuesday represents.

Hands-On – Participation Cooking Class: Aprons and workstations will be set up for you while your Chef-Instructor walks you through each course and giving you lots of tips and tricks along the way.

If you cannot make your reservation, we do encourage you to attempt to find someone that would enjoy attending. We can only issue a credit for you to attend a future event (6 month expiration). Within 72 hours we are not able to offer a credit as we’ve already incurred food and help costs.

Food is my life! I attended culinary school at the College of Dupage, received a bachelor degree in Culinary Arts at the Art Institute of Pittsburgh and masters in Education from Kaplan University. After a restaurant circuit I’ve been executive chef for various companies and institutions. I am currently a director of Food Service at a retirement home and I still teach culinary arts at the college of Lake County - which I love. I’ve traveled extensively and love picking up cooking techniques and flavors. There’s almost nothing I can’t cook but my favorite is classical French. I love cooking, teaching and sharing a great evening with our guests!
