Join our Fall cooking class where you’ll dive into the flavors of fall with a delicious menu! Start by crafting a rich acorn squash and caramelized onion soup, complemented by crispy rosemary sourdough croutons for added texture. Next, learn to prepare golden potato rösti served with a refreshing scallion salad and a zesty horseradish cream. The main event features a succulent whole roasted chicken paired with hearty white beans and pancetta for a satisfying dish. Conclude your culinary adventure with a dessert of classic apple tarte tatin, where you’ll master the technique of caramelizing apples in a buttery pastry. This class promises not only to enhance your cooking skills but to celebrate the rustic flavors of a home-cooked meal!

Participation: Combination of Participation and Demonstration – you will learn some knife skills and help prepare and plate the salad course.  And learn to properly carve the Chicken – Perfect practice for Thanksgiving Dinner!

If you cannot make your reservation, we do encourage you to attempt to find someone that would enjoy attending. We can only issue a credit for you to attend a future event (6 month expiration). Within 72 hours we are not able to offer a credit as we’ve already incurred food and help costs.

Michael ‘Mickey’ Knutson is a 17-year Chicago culinary veteran and creative professional with a wealth of knowledge & experience in high-level cuisine, service, and leadership. His career turns have ranged from intimate, chef-driven kitchens to expansive catering & events operations; high-volume American bistro and barbecue to upscale seafood and steakhouse brigades. He has a particular loving interest in the traditional foldaways of the American South and Northwestern Europe. Mickey lives in Rogers Park with his wife Laura and their three daughters.
